Based in haro, a small village in the autonomous region of la rioja, famous because of their long tradition in food conserves. Conservas Gonsal s.l.l. specialisation is the artisan production of top quality anchovy. We only use fresh in season from the cantabrian sea, selecting the best of the catches. They are fished in shallow waters using a "cerco" a fine ring net that trawls along the surface of the water only as the anchovies swirl in large schools there. In this way the fish is not damaged by the weight of the catch and the environment is not harmed. The anchovies are trimmed and filleted by hand. By processing the anchovies in this way they are without spines, dirt etc. The end result is rich and savoury product. Besides the anchovy in our gourmet collection gonsa, we can offer you smoked products like: Smoked anchovy, smoked sardines and smoked tuna. Our pincho collection is ideal for the horeca. We also offer the best-selected anchovies form Argentina and Chile commercialised like estrella del mar and alconfriosa. Our purchaser selects the anchovy from South America from which is elaborated in our factory in Peru.
