Processing stages are absolutely traditional: from gathering in the woods by truffle hunters to purchasing at the most accredited markets, from washing with fresh water to meticulous selection and various types of preservation. Whilst making use of the most sophisticated machine technology, the purpose is to protect all the genuineness, flavour and aroma, avoiding the use of colorants as required by law, seeking rather to improve the shelf life of a product that deteriorates in just a few days when it is fresh.
