Our speciality is The Gourmet Clayoquot Sound Smoked Oyster, is the ENTIRE Whole Oyster with NOTHING extracted. The size & quality of the Oysters are a result of the precise sorting, maturing, and harvesting cycle only obtained through hands-on selection. The Gourmet Clayoquot Sound Smoked Oysters are new to market, meeting final Federal Requirements in May 2003.
