This offers tremendous freedom in using any flavour combinations, ingredients, or decorating techniques. At Schokolade we strive to use 70% couverture in our creations (couverture is the term used for high quality chocolate used for dipping and enrobing, containing a minimum of 56% cocoa content. ) The percentage number refers to the amount of cocoa bean used in the couverture. Thus our 70% dark contains 70% of the natural goodness and flavor of the cocoa bean. Couvertures and chocolates with lower percentages will contain accordingly higher percentages of sugar and lower percentages of cocoa content.
